Rock Samphire is a true super veg being full of nutrients such as iodine, vitamin A, C and B2. Although considered to be a fine dinning food, rock samphire is common and available all year along rocky shorelines and cliffs in the UK. Easy to cook it can be used in a range of dishes from soups, salads and sauces. Rock samphire is a great plant to harvest and easy to identify with green-grey leaves and a white flower head.
Foraging is a great way to reconnect with the outdoors and learn about the plants in your local area. To make foraging sustainable, never completely clear an area of one plant. This will enable a plant to regrow next year and also leave some for the animals that rely on it.
